Monosodium Glutamate (MSG) is an amino acid found in all protein-containing foods, and is one of the most abundant and important components of proteins. Monosodium glutamate is the sodium salt of glutamic acid. When MSG is added to foods, it provides a similar flavouring function as the glutamate that occurs naturally in food.
